Boozy Banana Coffee Cake

I was just brainstorming one day, thinking of what i can make with leftover bananas in a 8x8 glass pan and no mixer. I cobbled this together from my handy-dandy Joy of Cooking. And i love baking with booze

Ingredients

CAKE BATTER

1 1/2 c
ap flour
1 1/2 tsp
baking powder
1/2 tsp
salt
2/3 c
brown sugar, firmly packed
1/3 c
shortning
2
eggs
2-3
mashed ripe bananas
1/2 c
booze soaked raisins (i used whiskey since thats what i had)

CRUMBLE

1/3 c
brown sugar, firmly packed
2 Tbsp
ap flour
2 Tbsp
butter, softened

GLAZE

1/2 c
brown sugar
1/4 c
milk
1/2 stick
butter
1/4 c
honey

Directions Step-By-Step

Preheat oven to 350, grease the bottom and sides of a 8x8 glass baking dish

Make BATTER

wisk dry ingredients together

cream together shortning and sugar

beat 2 eggs into sugar mix

slowly mix dry ingedients into wet, in 2 batches

add mashed bananas, mix til blended

fold in rasins

Make CRUMBLE

mix crumble ingredients til well blended and crumbly

Pour 1/2 - 2/3 of the batter into well greased pan

sprinkle with brown sugar crumbles

evenly spread remaining batter over crumble layer

Make GLAZE

in small saucepan on low heat, mix glaze ingredients

Bring to low boil

gently pour glaze over the cake before baking

Bake at 350 for about 30-35 min, or til toothpick comes out clean near the center of the pan

*omit this step if desired* poke holes in the cake with a toothpick, drizzle some booze over cake while still warm

allow cake to cool completely before serving
