A German grandma would make one of these cakes when family dropped by. It can be made fast, and it's also gone fast...thus the lightning cake.

Ingredients

1 c
butter
1 1/2 c
all purpose flour
1 1/2 tsp
baking powder
1 c
sugar
4 large
eggs
1 medium
lemon, grate rind and save juice of 1 lemon
1/2 c
cinnamon sugar mixture

Step-By-Step

1Sift flour and baking powder together. Grease 9X13 cake pan. Preheat over to 350.
2Cream butter and sugar. Add eggs, one at a time beat well.

Add flour, lemon juice, and rind. Spread in greased pan. Sprinkle with cinnamon sugar mixture and bake 20 minutes.
