  • FOR THE CRUST
  • 1 1/4 c
    chocolate graham cracker crumbs
  • 1/4 c
    brown sugar
  • 1/4 c
    unsalted butter, melted
  • FOR THE CHEESECAKE
  • 3
    8 oz. packages reduced fat cream cheese, room temperature
  • 1/2 c
    sugar
  • 1 tsp
    vanilla extract
  • 3
    eggs
  • 1/4 c
    seedless blackberry preserves

How To Make blackberry swirl cheesecake

    Heat oven to 350 degrees. In a medium bowl combine graham cracker crumbs, sugar and butter. Press onto bottom of 9-inch springform pan.

    In a large bowl beat cream cheese, sugar and vanilla with electric mixer until well blended. Add eggs, one at a time, mixing on low speed after each addition just until blended. Remove 1/2 cup plain batter and place in small bowl. Stir the preserves into the same small bowl until blended. Spoon plain batter into crust; top with spoonfuls of blackberry batter. Cut through batters with knife several times for marble effect.

    Bake 45 minutes or until center is almost set. Cool completely. Refrigerate 4 hours or overnight. Cut into 12 slices and serve with whipped cream and blackberries, if desired. Store leftover cheesecake in refrigerator.
