virginia's StoryStarted digging through old recipes in the back of my recipe box. I used this for family meals at holidays. It's also another good use for those too ripe bananas you're trying to figure out what to do with.
cream cheese ( 8 ounces) light, softened
1 3/4 c
candied cherries, chopped
miniature semisweet chocolate pieces
1 1/2 tsp
ripe bananas mashed (about 3/4 cup)

1Beat cream cheese in a small bowl until smooth. Add 1/4 cup of the sugar and egg: beat until well blended. Stir in cherries and chocolate peices: set aside.
2Combine flour, cocoa, baking powder and remaining 1 1/2 cups sugar in a large bowl. Add bananas, oil and water; stir until well blended.
3Spoon chocolate mixture evenly into 24 paper lined muffin cups. Spoon about 1 tablespoon cream mixture into the center of each cupcake.
4Bake at 350 F for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Remove from pan; let cool completely on wire rack.
