I don't know where this recipe came from, but my mother made this when I was growing up. It is still a favorite.

Yes, there really are no eggs in the cake part of the cupcake. It surprised me too.

Ingredients

FILLING

8 oz
cream cheese, softened
1/8 tsp
salt
1/3 c
sugar
1
egg
6 oz
semi-sweet chocolate chips

BATTER

1 1/2 c
all purpose flour
1 c
sugar
1/2 tsp
salt
1/3 c
canola oil
1 tsp
vanilla extract
1 tsp
baking soda
1/4 c
cocoa, unsweetened
1 c
water
1 Tbsp
vinegar

Step-By-Step

1Preheat the oven for 350 degrees.
2Beat together cream cheese, sugar, egg and salt. Add chocolate chips. Set aside.
3Beat all batter ingredients together until blended.
4Place cupcake liners in regular muffin/cupcake pan. Fill cupcake liners 1/3-1/2 full. top each with a heaping teaspoon of cream cheese filling.
5Bake at 350 degrees for 20-30 mintes.
