Blue Ribbon Recipe

One bite, and I understand wanting to eat all of this in one day! You get bits of pineapple in every bite. And it couldn't be easier to make - great for unexpected company. I know I'll be making this again!

Ingredients

CAKE MIX
1 can(s)
crushed pineapple with juices 15 oz
2 c
flour
2 c
sugar
2 tsp
baking soda
2
eggs
1 tsp
vanilla extract
CREAM CHEESE ICING
1 stick
butter
2 c
confectioners' sugar
1 pkg
cream cheese
OPTIONAL TOPPING
toasted sweetend coconut

Directions Step-By-Step

Mix cake ingredients together and pour into a greased 9 x 13 pan. Bake at 325 degrees for 45 minutes

Blend all ingredients for icing together and ice cake when it cools

Great recipe it's very moist. I've had a cake similar to this with chopped walnuts added to the cake batter. Would make a good picnic cake if you leave off the icing and dust with powdered sugar!
