You may substitute 6 child containers of apple sauce for the 4 cups of chopped apples, if you prefer, if you're in a hurry.

Ingredients

4 c
chopped apples or 6 child containers of apple sauce
1 c
chopped pecans/or what types of nuts you prefer
3/4 c
very good cooking oil (don't scrimp on the cost;it makes a difference in the taste)
2 c
granulated sugar
2 large
eggs, beaten
1 tsp
good vanilla flavoring
2 c
all purpose flour
1 tsp
salt
1 tsp
baking soda
1 tsp
ground cinnamon

GLAZE FOR CAKE

1/2 c
powdered sugar
2-4 Tbsp
fresh lemon juice (depending on how thick or thin you like it)

Directions Step-By-Step

Mix together oil, sugar, eggs and vanilla.
Add apples or apple sauce and nuts and mix well.
Sift dry ingredients together and add to the wet mixture.
Pour into a greased and floured bundt pan.
Bake in a 325 degree oven for 60 minutes, or until a toothpick inserted comes out clean.

Glaze:
Mix together powdered sugar with a small amount of lemon juice and dizzle over the cooled cake.
