Preheat oven to 350. Grease and flour an 9x13 cake pan or two 9 inch round cake pans.
In a large bowl, stir together all the dry ingredients. Add the eggs, milk, oil, & vanilla & mix for 2 minutes with electric mixer on medium speed.
Stir in the very hot coffee last. Batter will be thin.
Pour evenly into prepared pan(s) & bake 30-35 minutes in preheated oven until toothpick in center comes out clean. (Round layers: cool in pans for 10 minutes and then transfer to wire rack to cool completely.) Once cooled, frost with frosting of choice & enjoy!
