This year the apples are abundant in New York State.
So I pulled every recipe card out I have that include apples and got baking. The aroma of apple sauce to baked goods was so inviting.

Blue Ribbon Recipe

Notes from the Test Kitchen:
Thanks to the applesauce, apple juice concentrate and the apples, these are some apple intense muffins. And they're FABULOUS! The applesauce also helps make them really moist. The best part is how yummy your kitchen will smell while baking.


1 1/4 c
oat bran
1 c
whole wheat flour
2 tsp
1 tsp
baking powder
3/4 tsp
baking soda
1/2 tsp
2 Tbsp
brown sugar
3/4 c
unsweetened applesauce
3/4 c
apple juice, frozen concentrate
1/4 c
vegetable oil
2 large
egg, whites
1 tsp
vanilla extract
1/4 c
chopped walnuts or pecans
1/4 c
chopped apple

Directions Step-By-Step

Preheat oven to 350. In a medium bowl, add first 6 ingredients and mix to combine well. In large mixing bowl combine rest of ingredients and beat well until creamy.
Stir dry ingredients into wet ingredients and mix well until no flour remains.
Fill paper liner in muffin pan almost full. Bake 15 - 20 minutes or until tooth pick comes out clean in center of muffin. Makes 1 dozen muffins.
