Ingredients

3 c
finely diced apples
2 tsp
cinnamon
2 tsp
vanilla
3 1/2 c
flour
1 tsp
baking soda
1 tsp
salt
2 c
sugar
1 1/4 c
vegetable oil
3
eggs
1/2
container german chocolate frosting

GLAZE

1 c
toasted pecans
3 to 4 Tbsp
vanilla soy milk
2 Tbsp
cinnamon
2 c
powdered sugar

Step-By-Step

1Glaze: Add all the ingredients to a small bowl and stir until smooth. Set the bowl aside.

2Preheat the oven to 325 degrees F. Lightly grease a Bundt pan or tube pan.

3In a bowl, mix together the apples, vanilla, and cinnamon. In a separate bowl, mix together the flour, baking soda, and salt.

4Using a mixer beat the sugar, oil, German Chocolate Frosting and eggs in a large bowl. Add in the dry ingredients and beat until completely combined. Fold in the apple mixture.

5Scrape the batter into the prepared pan and bake for 1 hour and 30 minutes or until a tester inserted into the middle of the cake comes out clean.

6Allow the cake to fully cool in the pan, about 1 hour, and then turn it out onto a plate

7Glaze: Add all the ingredients to a small bowl and stir until smooth. Set the bowl aside.
Drizzle the cake with some of the cinnamon glaze, and then sprinkle the pecans on top
