Apple Cinnamon Coffee Cake

This is a great recipe to make with all those apples that you picked in the fall! My family loves this cake warmed up with ice cream on the side.

Ingredients

2 large
or 4 small baking apples - peeled, cored and chopped small
1 1/2 c
all purpose flour
1 c
sugar
1/4 tsp
salt
1 tsp
baking powder
1/2 tsp
cinnamon
1/2 tsp
vanilla
1/4 c
butter - melted and cooled
3/4 c
half and half or milk
1 large
egg, beaten

TOPPING:

1/4 c
light brown sugar - packed
2 tsp
cinnamon
1/2 c
chopped walnuts or pecans

Step-By-Step

1Preheat oven to 350 degrees Fahrenheit.

2Grease an 8x8 pan with cooking spray.

3In mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.

4In another bowl, mix together the melted butter, egg, vanilla and milk or half-n-half.

5Combine the wet and dry ingredients gently, being careful to not over mix. The batter should be slightly lumpy. Add in the chopped apples.

6Combine the nuts, brown sugar and cinnamon. Spread over the top of the batter.

7Bake for about 50 minutes, or until toothpick inserted in center comes out clean. This is delicious served warm and with ice cream. Cover and store remaining cake in fridge.
