Apple Cinnamon Coffee Cake

1Preheat oven to 350 degrees.
2Grease a 13 x 9 pan or a 12-cup tube or bundt pan with cooking spray.
3Peel and core all apples. Take two apples and slice thinly. Chop remaining apples up into small pieces. Toss with lemon juice to prevent browning.
4Combine cinnamon and brown sugar and set aside 1 tablespoon; toss prepared apples with remainder and set aside.
5For the cake, whisk together sugar, oil, vanilla, orange juice and eggs.
6Combine flour, baking powder and nutmeg and fold into sugar mixture.
7Line bottom of pan with apple slices. Spoon a little more than one third of the batter into prepared pan; cover with half of apple mixture, then spoon in remaining batter and apple mixture.
8Sprinkle top lightly with the reserved cinnamon-sugar.
9Bake in preheated oven for 45 minutes (1 hours for bundt) or until done.
10Loosen sides with a butter knife, then invert cake onto a plate for serving.
11NOTE: May lower fat in recipe by replacing oil with applesauce.
