Make the crust: In a small bowl, beat butter until fluffly. Add ground almonds and extract and mix. Work flour into mixture until a ball of dough forms. Roll out dough. I placed dough between two sheets of wax paper. Roll into a 10" circle. Place in a spring form pan and press dough slightly up the sides. Refrigerate 30 mins.
Make filling: Beat cream cheese until smooth. Add sugar, egg and extract. Pour into chilled crust.
Make topping: In a large bowl combine sugar, flour and cinnamon. Arrange apples on top of cake in a circular pattern until all slices are used. Sprinkle with brown sugar mixture and then sprinkle almonds on top.
Bake in a 425 oven for 10 mins., then turn down to 350 and bake for 30-35 mins. and until apples are tender.
