Amish Pineapple Cake

Not a difficult cake to make, and the creme cheese icing makes it perfect!

Ingredients

CAKE

2 c
flour
2 c
sugar
2 tsp
vanilla
2 large
eggs
2 tsp
baking powder
20 oz
can of crushed pineapple-do not drain

CREAM CHEESE ICING

8 oz
cream cheese
1 stick
softened margarine
1 1/2 c
powdered sugar
1 tsp
vanilla

Step-By-Step

1Grease and flour 9" X 13" cake pan.

2Preheat oven to 350.

3In a large bowl, mix cake ingredients by hand.

4Pour into greased & floured pan.

5Bake for approximately 40-45 minutes until cake is golden brown on top.

6When cake is cool, top with icing.

7Icing--use electric mixer to mix all ingredients for icing and spread on cool cake.

8Enjoy-but it's better on the 2nd or 3rd day.
