This is a very moist and delicious carrot cake that I got from one of my many books on Amish cooking; it one of the best cakes you'll ever eat!

Ingredients

3
eggs
2 c
all-purpose flour, sifted
2 c
sugar
1 1/4 c
vegetable oil
2 tsp
baking soda
1 tsp
cinnamon
1 1/8 tsp
salt
1 tsp
vanilla extract
1 c
shredded coconut
1 c
walnuts, chopped
1 c
crushed pinnapple, drained
1 c
raw carrot, shredded

Step-By-Step

1Preheat oven to 350 F.

2In a large mixing bowl, beat eggs; add the next seven ingredients and beat until smooth.

3Stir in the coconut, nuts, pinapple and carrots with a mixing spoon; pour into a greased 9- X 13-inch baking pan.

4Bake in preheated oven for 50 minutes.

5When cake has slightly cooled, spread with Cream Cheese Frosting (recipe follows).
