Ingredients: 3 1/2 cups diced (skin on) red potatoes, about 1/2” cubes; 1/3 cup finely chopped onion; 2 cups diced cooked ham, about 1/2” cubes; 2 cups corn kernels, fresh or frozen; 3 1/4 cups chicken stock; 1 - 1 1/2 tsp kosher salt; 1 - 1 1/2 tsp black pepper; 4 Tbl butter; 7 Tbl flour , divided; 2 cups plus 2 Tbl half and half; 1/3 cup green onions, chopped whites and greens; 1 cup shredded cheddar plus additional for garnish; Crispy bacon for garnish
