1/2 white onion
8 to 10 sprigs fresh epazote (or cilantro)
14 cups water
1 teaspoon kosher or coarse sea salt
3 tablespoons vegetable oil (or lard)
1/2 cup finely chopped white onion
2 to 3 xcatic, güero, or banana chiles (you may add a habanero, too)
