salt and pepper to taste

2 tablespoons olive oil (or butter)
1 shallot (or 1/4 cup onion), finely diced
2 cloves garlic, chopped
1/4 teaspoon red pepper flakes
1/4 cup dry white wine (or chicken broth)
3/4 cup chicken broth
1/2 cup heavy/whipping cream
1/2 teaspoon italian seasoning (or oregano)
4 cups baby spinach
1/4 cup parmigiano reggiano (parmesan cheese), grated
salt and pepper to taste
