I have many leftover items from previous recipes that I may or may not use again: food coloring, sprinkles, etc. Here, I've combined a few leftovers in my cabinet which was a hit with the kids. They are quick, easy and sweet tasting.

2Ladle pancake mix on to flat griddle or frying pan. Shake sprinkles on top. Cook for 3-4 minutes on medium high and flip once bubbles have surfaced and bottom is firm.

3SERVE! They are sweet tasting - no syrup needed. Tip: If making them in a frying pan (one by one), set oven to warm and place each pancake on a lined cookie sheet (aluminum foil with non-stick cooking spray) in the oven while others are cooking. Any size pancake works fine (dollar to large).
