One of the "Just a Pinch" members asked for a recipe to make your own Pancake Mix (with only dry ingredients). After responding to her, I thought how nice it is to be able to make your own mixes, so I am posting it here also. And I am also including the directions for mixing other ingredients with the mix to make "Perfect Pancakes." I have had this recipe since 1978 and have used it several times over the years. It is just me (and my kitty cat) now, so it takes me a good while to use it up. Enjoy this recipe and pancakes more often since you will already have the mix made; only add liquid

Put Pancake Mix in a medium bowl. Combine egg, water and oil in a small bowl. Add egg mixture to Pancake Mix. Add more water for thinner pancakes. Blend well. Let stand 5 minutes.

Cook on a hot oiled griddle about 3 to 4 minutes, until browned on both sides.
** The book on Mixes has several other recipes included using the mix -and I am happy to share if you would like. They are for Puff Oven Pancakes, Golden French Toast, Onion Rings and Monte Cristo Sandwiches. Enjoy!!
