I love breakfast, BUT eggs just do not always excite me!! But when I experimented with this waffle treat...lets just say, it is our favorite weekend protein rich feast!! Cornmeal adds an extra crunch to the waffle.
all purporse flour
eggs, well beaten
1 3/4 c
melted crisco/cool well
maple syrup warmed
1preheat waffle iron, I use a Belgium style but square will work
2Mix dry ingredients in a mixing bowl. combine well beaten eggs, milk and sugar. Add to dry mixture; Blend well, add cooled shortening. Bake on iron per directions for the type you are using.
3Cut bananas into bite size pieces. Mix Greek yogurt with honey. Chop walnuts. Keep finished waffles warm in the oven until batter completed.
4To Assemble: place each waffle on a warm plate, top with 1/4 c yogurt, 1/2 c chopped banana, top with 1/4 c nuts.
5Drizzle with Warm maple syrup. ENJOY. I can usually get 4 nice size waffles out of this recipe using my type iron.
