Ingredients

1 c
sifted flour
2 Tbsp
sugar
2 tsp
baking powder
1/2 tsp
salt
1/2 tsp
cinnimon
1 c
milk
1/2 c
canned pumpkin
2
slightly beaten egg yokes
2
stiffly beaten egg whites
2 Tbsp
melted butter

Directions Step-By-Step

(OPT) I also like to add a little ginger or nutmeg to the batter along with about a half cup pecans. Just add according to your liking.

Sift together dry ingredients.
Combine milk, yokes, pumpkin & butter.
Add to dry ingredients, stirring just until flour is moistened.
Gently fold in egg whites.

Preheat griddle and use 1/3 cup batter per pancake. Cook evenly on both sides. Makes 8 pancakes.
Serve with "Warm Cider Syrup" or your favorite maple.
