Ingredients

all purpose flour
1 tsp
baking powder
1 tsp
baking soda
1 Tbsp
pumpkin pie spice
1/2 tsp
salt
2 Tbsp
sugar
1 c
buttermilk (or 1 cup milk less 1 tablespoon,plus 1 tablespoon lemon juice)
1/3 c
canned pumpkin
2 large
eggs
1/4 c
vegetable oil
1 Tbsp
vanilla

Step-By-Step

1Whisk, flour,baking powder,baking soda,spice,salt and sugar in large bowl. Whisk in buttermilk,pumpkin,eggs,oil and vanilla until well blended.

2Spray large nonstick griddle or skillet with cooking spray and heat over medium heat until a sprinkle of water sizzles. Use a 1/3 measuring cup Pour onto pan cooking about 1 1/2 minutes per side until bottoms are lightly brown,
