My Grandpa created this pancake recipe. Whenever we went to visit he would make a point of making these. Brings back lots of memories.

Nothing says morning comfort quite like good buttermilk pancakes... and these are among the best we've had! Super light and super flavorful. A morning delight.

Ingredients

1 qt
buttermilk
4
eggs
1/2 c
sugar
2 c
flour
dash
salt

Directions Step-By-Step

Mix all ingredients together well.

Heat a skillet with a thin coat of oil. Once heated, pour about 2 in. size circle of batter (pancakes are thin, almost crepe like).

After pancakes looked cooked along edges flip and finish cooking on the other side. Add oil to skillet as needed.

Continue until all batter is used. Enjoy with your favorite pancake topping.

NOTE: After cooked, if you have leftovers, they freeze well. Just make sure to place a peice of wax paper between each pancake.

Loved these. They were fantastic. I don't like heavy, thick pancakes. It was a great morning for them too-cloudy, rainy, staying inside weather. I'm in Franklin, WI so you know what I mean.

My grandmother always made these for us as kids, and my Mom, now myself and my siblings. My grandmother called them Egg pancakes, pretty ,much a crepe. WE ate them with Karo Syrup back then, now we opt for a healthy maple syrup, or one without high fructose. Fresh fruit and powered sugar are always good!

Awesome....they are so light and yes, crepe like, w/ beautful fresh blueberries and N.H. maple syrup....a Keeper for sure....
