4 eggs
1/2 c sugar
2 c flour
dash salt

My Grandpa created this pancake recipe. Whenever we went to visit he would make a point of making these. Brings back lots of memories.

Nothing says morning comfort quite like good buttermilk pancakes... and these are among the best we've had! Super light and super flavorful. A morning delight.

 

Directions

Mix all ingredients together well.

Heat a skillet with a thin coat of oil. Once heated, pour about 2 in. size circle of batter (pancakes are thin, almost crepe like).

After pancakes looked cooked along edges flip and finish cooking on the other side. Add oil to skillet as needed.

Continue until all batter is used. Enjoy with your favorite pancake topping.

NOTE: After cooked, if you have leftovers, they freeze well. Just make sure to place a peice of wax paper between each pancake.

I love small, light pancakes (vs the plate sized, thick as a plate pancakes that some prefer). Don't eat pancakes frequently, but can't wait to try these with a friend who LOVES pancakes! Thanks for the recipe.

Buttermilk is the secret to the best pancakes and waffles. The only thing that makes a pancake lighter is to seperate the eggs, beat the whites and fold into the batter. Your Grandpop was on to something good!

I must try this,, My husband is known as Papa to all the grand-kids and their friends! They all love pancakes and blueberries.. I love family recipes! Sunday breakfast next week!

Pancakes and waffles are always served with Peanut Butter instead of plain butter in our home. Yummy.

Leave out the sugar and you have what I call Daddy's Pancakes. You're going to put syrup on them anyway, so why add all that sugar.

By the way, you can substitute milk and lemon juice in most recipes, but NOT this one. You must use buttermilk in Daddy's Pancakes.
