We also do canning, and put together baskets of "goodies" and take them to elderly and disabled people to brighten their holidays!

Ingredients

1 c
whole wheat flour
3 c
all purpose flour
1 c
finely ground almonds
4 c
milk, nonfat, dry
1/2 c
sugar
1 Tbsp
salt
3/4 c
baking powder

Directions Step-By-Step

In a large bowl, stir all ingredients together until well blended. Store in a airtight container or a resealable plastic bag.

Yields about 10 cups pancake mix, enough for 5 batches of pancakes.

Give with the following recipe for pancakes.

Almond Pancakes:

2 1/2 cups pancake mix
1 1/4 cups water
1 egg
2 tablespoons vegetable oil

In a medium bowl, combine all ingredients, and stir just until moistened.

Heat a greased griddle over medium heat. For each pancake, pour about 1/4 cup batter onto griddle and cook until top of pancake is full of bubbles and underside is golden brown. Turn with a spatula and cook until remaining side is golden brown. Re-grease griddle as necessary. Serve with butter and syrup.

Yields about 1 dozen 5-inch pancakes

I make labels for the jars or packages, or I make a recipe card with a hole punched in it to hang on the ribbon that I attach to the jar.

I also use a plate or other round item to trace circles 3 - 4 inches bigger around than the jar lid. I use a rubber band to attach the cloth circle to cover the lid/ring on the jar. Then I tie a pretty ribbon on to cover the rubber band and to attach the recipe card. Then tie a pretty bow.
