Gift In A Jar Almond Pancake Mix
We let the kids help make this and they give it as gifts to teachers and family.
We also do canning, and put together baskets of "goodies" and take them to elderly and disabled people to brighten their holidays!

- whole wheat flour
- 3 c
- all purpose flour
- 1 c
- finely ground almonds
- 4 c
- milk, nonfat, dry
- 1/2 c
- 1 Tbsp
- 3/4 c
- baking powder
- 5 pt
Give with the following recipe for pancakes.
2 1/2 cups pancake mix
1 1/4 cups water
2 tablespoons vegetable oil
In a medium bowl, combine all ingredients, and stir just until moistened.
Heat a greased griddle over medium heat. For each pancake, pour about 1/4 cup batter onto griddle and cook until top of pancake is full of bubbles and underside is golden brown. Turn with a spatula and cook until remaining side is golden brown. Re-grease griddle as necessary. Serve with butter and syrup.
Yields about 1 dozen 5-inch pancakes
I also use a plate or other round item to trace circles 3 - 4 inches bigger around than the jar lid. I use a rubber band to attach the cloth circle to cover the lid/ring on the jar. Then I tie a pretty ribbon on to cover the rubber band and to attach the recipe card. Then tie a pretty bow.
