Dog Kelly's favorite gridle cakes

Im sure this recipe would be just as good cooked on inside griddle as it would be cooked out "on the open range". I have not cooked these griddle cakes myself, but, I can't wait. Got this recipe from cookbook I bought at place of work. The name of book......easy recipes of chuck wagon cooking. Too bad they did not give "chuck wagon cooking instructions for out-doors." They sound delicious anyway. Give them a try

Ingredients

slices bacon, cut in half and cooked
2
cups flour
2 tbs
baking powder
3 tbs
sugar
2
eggs, beaten
1 1/2
cups milk
3 tbs
oil or bacon drippings

Step-By-Step

1Combine dry ingredients, add eggs and milk. Cook bacon until done, but not dry. Move bacon aside to accommodate griddle cakes.

2Using a half slice of bacon for each cake, pour batter over bacon onto hot griddle. Turn the cakes when they begin to look dry around the edges.

3Cakes should be light, tender and golden brown in color. Serve hot, directly from griddle to plate. Serve with syrup, honey or preserves, if desired.
