This is one of my favorite go to recipes for a quick and easy breakfast or supper. It's now a comfort food for me. I prefer to make it with sharp cheddar cheese but use what you like and make it yours.
1Mix the cheese, flour and salt with a fork or hands.
2Stir in the egg and sour cream or cream cheese. Mix well with a fork or whisk.
3Heat 1 or 2 Tbsp of butter (I often use coconut oil) in a skillet over medium heat and drop the batter with a ladle or spoon onto the hot skillet. Fry until the bottom is golden, then turn and fry the other side until done.
4Serve with butter, syrup, or whatever you like. I eat this with just a bit of garlic powder and pepper with a side of fruit but it's also delicious with gravy!
