Notes from the Test Kitchen:
From now on, I'm going to make sure I have extra baked potatoes so I can make this breakfast skillet again. I used ham in the Test Kitchen, but any meat will be great. This is a great recipe for using up leftovers. I loved the combination of peppers, onion, and other spices. Serve this skillet alongside eggs and you have an easy to make hearty breakfast.

Ingredients

potatoes
1 c
meat - bacon, ham, leftover ribs or pork
1/2 c
green pepper
1/2 c
onion
1 Tbsp
oil
1 Tbsp
butter
1 tsp
garlic powder
1 tsp
season salt
1/8 tsp
pepper
1 c
shredded cheese

Step-By-Step

1The night before, bake 4 potatoes, let cool and put in refrigerator until morning.
2Peel and dice potatoes. Add to oil and butter in skillet. Then add potatoes, onion, peppers, and spices. Saute for 10 minutes on medium-low.
3Add meat and saute for 15 minutes or until hot.
4Add cheese and turn burner off for 5 minutes.

*My cooking isn't always the necessary way lol. You don't need both oil and butter, I just like to fry and saute that way.
