A yummy make-ahead breakfast. I warm them up for a few seconds in the microwave before serving.

Make-ahead breakfasts are a timesaver on a busy morning, and these baked oatmeal cups are a healthy way to start the day. Don't confuse these with muffins, though. Their texture is completely different. They are only sweetened with honey, so they're not super sweet. The dried cherries plump while baking and add to the sweetness. You can easily drizzle a little extra honey on them when serving. Make these on a Sunday evening, and then all you need to do is pop one in the microwave for a few seconds during the week for a healthier breakfast.

Ingredients For baked oatmeal cups

  • 2 lg
    eggs
  • 1 tsp
    vanilla extract
  • 2 c
    unsweetened applesauce
  • 1 Tbsp
    honey
  • 2 1/2 c
    rolled oats
  • 1 Tbsp
    cinnamon
  • 1 1/2 tsp
    baking powder
  • 1 1/2 c
    almond milk
  • 3/4 c
    dried cherries

How To Make baked oatmeal cups

  • Eggs, vanilla extract, applesauce, honey, almond milk, oats, cinnamon, baking powder, and dried cherries in a bowl.

    Combine eggs, vanilla extract, applesauce, honey, and almond milk. Mix well. Add to liquid, oats, cinnamon, baking powder, and dried cherries.

    Stir well to combine.
  • Spraying a muffin tin with cooking spray.

    Spray a muffin pan with cooking spray.
  • Oatmeal mixture in the muffin tins.

    Scoop the mixture into the greased pan. Allow to sit in the pan while the oven preheats to 350 degrees.
  • Baking the oatmeal muffins.

    Bake 25-30 minutes until golden brown.
  • Baked Oatmeal Cups cooling.

    Allow to cool in the pan. These keep well in the refrigerator for 5 days.
