This lasts several days and I like to have it on hand for a quick breakfast. It can be served warm or cold and is great topped with yogurt and fruit. There are many variations and I have listed several in the directions.

Ingredients For baked oatmeal

  • 2
    ripe bananas
  • 1 c
    oatmeal, uncooked
  • 1 tsp
    baking soda
  • generous dash
    salt
  • 1/4 c
    packed brown sugar
  • 1
    egg
  • 1 c
    milk
  • 1 scoop
    vanilla or chocolate protein powder, optional
  • 1 tsp
    vanilla extract
  • 1/2 c
    chopped nuts, optional

How To Make baked oatmeal

    Preheat oven to 350 degrees F.

    Mash bananas in bowl.

    Add dry ingredients except nuts and mix. The protein powder is optional, but I prefer to up the protein content.

    Add wet ingredients and mix well. Stir in the nuts, if desired.

    Pour into a greased or parchment lined baking dish, 9x5 loaf pan, or muffin tins.

    Bake for 25 minutes. It should no longer jiggle when you shake the pan but you don’t want to dry it out. Let it rest 20-30 minutes before cutting.

    This is my base recipe and it tastes like banana bread. There are many ways to change it up: - Add chocolate chips - Brownie version - Add 1/8 cup cocoa powder, use white sugar instead of brown, chocolate protein powder instead of vanilla, add chocolate chips - Black Forest- add frozen cherries to brownie version, but remove nuts - Carrot cake - add 1/2 c grated carrots, 1/2 tsp cinnamon, generous dash nutmeg - PBJ - add 1/4 cup nut butter and 1/4 c jam of choice - Berries - add 1/2 c blueberries, strawberries etc Experiment and make it your own!
