1Heat a large frying pan over medium heat and add the sausage. Cook for 8 to 10 minutes, turning occasionally, until cooked through. Remove from the pan and set aside.
2Add the olive oil to the sausage fat in the pan and then add the potatoes. Cook over a low heat for 5 to 8 minutes, turning occasionally until golden. Meanwhile,, cut the sausages into bite size chunks and add to the pan.
3Add the spring onions to the pan and cook for a couple more minutes until they are piping hot. Season with salt and pepper and serve immediately.
