Canadian Bacon Upside Down Cake

We love this easy cake for breakfast with scrambled eggs. The bread, fruit and meat are all in the cake.

Ingredients

12 slice
canadian bacon
3 Tbsp
butter, unsalted
8 1/4 oz
can pineapple rings, drained
12 oz
package cornbread mix
ingredients for preparing cornbread as listed on package
maple syrup

Step-By-Step

1In a 10 inch cast iron skillet melt butter over low heat. Remove from heat.

2Drain pineapple slices on paper towels.

Arrange 1 ring in center of skillet. Arrange the remaining pineapple around the edge.

3Layer bacon over pineapple slices, overlapping if necessary.

4Prepare cornbread mix and spoon over bacon and pineapple.

5Cover and cook over medium heat 15-18 minutes or until test done.

6Cut into wedges. Serve warm with maple syrup.
