Fry bacon until crispy...drain well on paper towels to remove all grease; set aside.
Mix pancake batter according to directions on box..the amount of batter you use will depend on how many strips of bacon you fry..one piece per (long) pancake....see picture above.
Lay precooked bacon strip on electric griddle or frypan..that has been sprayed with pam or 1 T. of oil spread on surface so pancakes don't stick. You can also use butter. Take batter and pour slowly over the length of the bacon. Cook until each side is golden brown...Serve with your favorite syrup, and a couple of fried eggs on the side.
