In a bowl mash your ingredients together until they form a uniform paste for the strawberry mash and set aside. For the strawberry glaze only use 2 tablespoons and set the rest to the side.
In a glass dish mix your egg,milk,sugar,vanilla and cinnamon together and set aside.
Heat a sauté pan to medium heat and melt a little butter in it. Hollow out a center in each piece of bread and stuff with the strawberry mash. Dredge the stuffed bread into the French toast batter and immediately fry until golden on all sides. Repeat with remaining bread.
Top the French toast with the left over strawberry glaze and sprinkle with powdered sugar. Add some fresh bananas, chopped pecans, or more sliced strawberries and whipped cream for a pretty presentation.
