Cinnamon Toasted Fruit Pita

This is a recipe I developed for the Culinary Quest 2016 Challenge "Pita - Stuff It!" This makes for a delicious breakfast or even a light dessert!!

Ingredients

CINNAMON & SUGAR MIXTURE

2 tsp
sugar
1/2 tsp
cinnamon

STUFFING MIXTURE

5 oz
greek yogurt, vanilla flavored
4 medium
strawberries, sliced
1 small
banana, sliced
1/2 small
apple (i use peeled granny smith) diced
10
grapes, sliced in half
4 tsp
sliced almonds, toasted

PITA

pita pockets, cut in half and split open for stuffing
2 tsp
butter or olive oil

Directions Step-By-Step

Heat a cast iron griddle or any skillet over medium-low heat.

If you don't already have a cinnamon & sugar mixture, then mix the two together in a small dish. Butter/oil both sides of the 4 pita. Sprinkle each side with 1/4 tsp of the cinnamon mixture. Place all 4 pitas on pre-heated griddle and cook until nicely browned, about 3-5 mins, and then flip to the other side and repeat.

While pitas are browning/toasting, clean and slice all the fruits and add to a bowl, mix until well combined.

Let the pitas cool and then spread 1-2 tablespoons of the Greek yogurt inside the pita, fill with fruit and sprinkle the toasted almonds. Enjoy.

TIP: If you need to toast your sliced almonds, put them on a small pan and put them in a pre-heated oven or toaster oven for about 4-5 minutes, until lightly browned.
