My husband and I love to throw the "kitchen sink" into our scramble and they make a great accompaniment to any breakfast or brunch meal!

Ingredients

eggs
2 slice
honey turkey
1/4
scallions
1/2 c
spinach
1/4 c
tomatoes diced
1/4 c
shredded cheese sharp
olive oil, extra virgin
sea salt
pepper

Directions Step-By-Step

Place olive oil just slightly enough to coat the bottom of the pan. Add in the scallions and turkey. Cook for about 2 to 3 minutes and then add in your spinach.

In a bowl crack three eggs and whisk together. Sprinkle in a little salt( I use Sea Salt, but whatever you like is fine) and pepper. Add the eggs to the scallion, turkey and spinach mixture. Once eggs begin to cook, add in the shredded cheese. Cook for another 2 to 3 minutes. At the very end of cooking add tomatoes on top and serve! ENJOY!
