Ingredients

2 oz corned beef, (from deli) chop in strips
1/2 c sauerkraut
3 lg eggs or egg substitute
2 Tbsp milk
1 Tbsp unsalted butter
1 btl miracle whip "secret burger sauce" or thousand island dressing
salt & pepper
CHEESE SAUCE AND SHAMROCK TOAST
pumpernickel & rye bread
shamrock cookie cutter
1 - 2 Tbsp butter
1/4 c cream or half and half, (approx. give or take a little)
1 Tbsp flour
1/8 - 1/4 tsp dry mustard
1/2 c swiss cheese, shredded (try & get a good strong swiss)
GARNISH
2 stalk(s) green onion, chopped
1 pinch bacon, crumbled

Kim's Notes:

Well, St. Paddy's day was upon us and I was browsing recipes in Just a Pinch and stumbled upon this recipe that needed adopted. So, I took it and made it my own with adding more goodies and switching it to fit my taste.

Wow, I will now look forward to making this Reuben Omelet from now on. It is one hearty omelet and stars all the flavors of the Reuben. I didn't even rinse my kraut cause I want all the health benefits I can get from it. I love the swiss cheese sauce and the addition of my shamrock toast points to dip in the sauce too.

Directions

Grill up your sliced corned beef and sauerkraut (do not drain) in a pan. You'll be fine to place your kraut right into the pan w/o draining that way you keep all the health benefits in with the kraut.

If making this for a celebration for St. Paddy's day, go ahead and cut out your Shamrock bread to make toast.

Beat your eggs and milk in a bowl with a little salt & pepper. Add to a heated pan w/hot oil and pour in. Now, swirl around a litte so that your omelet cooks evenly. Lift up the edges of egg mixture with spatula to allow uncooked egg to run under. Once it is almost cooked through add your hot corned beef, kraut on top and then squirt on your "Secret Burger Sauce".

Fold over omelet in pan....this is a heavy omelet so use 2 spatulas so that it doesn't tear like mine did. No worries though if it does as you are going to add a swiss cheese sauce on top. Yumm

Meanwhile, heat your butter on medium/low heat in a small pan and then add your flour; stir till combined. Then add your 1/4 cup of half and half or cream and continue to stir. Add, your seasonings and shredded swiss cheese. Stir till completely melted and at a nice "pour" consistency. If it is too thick add more cream.

Being that I live in a town with a few "Irish" folk I was unable to find any Thousand Island dressing 2 days before St. Paddy's day, so I came across this amazing sauce to use instead called "Secret Burger Sauce". On the back of the bottle it reads: "Why go out to a burger joint when you enjoy this bold twist on thousand island flavor at home?." ---This worked perfectly!

Hi Roda, I am sure you will love it. I adopted this lonely recipe and making it my own. I am trying to get it updated with my changes and all the details. I still have to write up my cheese sauce directions, so hopefully by tomorrow it will be all updated with info. Let me know if you make one.
