5 eggs, beaten well
1/2 tsp salt and pepper
1/4 Tbsp olive oil, extra virgin
1/2 Tbsp butter, room temperature

The other night I was watching one of my favorite show "Barefoot Contessa". She showed how she makes her scramble eggs. I have made scramble eggs before but I thought I would give hers a try. I was glad I did. Normally when I make mine they kind of come out a little tough. But this time they came out soft & creamy. Gonna be making this again.

 

Directions

frist per heat a frying pan over meduim heat. Beat all the eggs well & then add in the salt & pepper. Mix to combine the spices.

Then add in the oil & butter to heat. Once butter has melted lower the heat & pour in the eggs. Mix the eggs until comes to s soft creamy scramble. Remember to mix all the way thru cooking.

Note: If you cook eggs on high heat, the eggs will come tough. Low heat makes soft creamy eggs.

My Hubs likes his eggs soft like this...I've always liked my cooked longer but am learning to eat them softer.

I know, me too before but this way was good. I liked it & plain to make it again for us breakfast.

Hey my little GD, these sound good , but if you want them to be real fluffy add a little pancake batter made with milk to the eggs. (pancake mix and milk) you will see the difference in the fluff. Uncle will love it!
