I often serve huevos rancheros at home and decided to have a little something different for Sunday Breakfast. I know this may not be to everyone's taste so we're also having a "conventional". Just want to keep breakfast changing so no one gets bored.
We were gifted with a lot of avocados from a church member's tree which were ripe,so we made guacamole.

tostada shells
black beans
poached eggs
salsa,your favorite
jack cheese,shredded

Directions Step-By-Step

Heat tostada shells in a hot oven till crispy. Cover with black beans,top with a poached egg. Add cheese,place in oven until cheese melts.Optional,top with salsa,sour cream and guacamole.
