Stove Top

Ingredients

4
english muffin halves
2 Tbsp
butter
4 slice
ham or canadian bacon or 8 slices bacon, cooked
4
eggs
2
egg yolks
2 1/2 - 3 Tbsp
lemon juice
1/2 c
cold butter ( do not cut up)
1
avocado (optional)
2 Tbsp
sour cream (optional)

Step-By-Step

1Butter muffin halves and toast under broiler.
2Fry ham or bacon.
3Poach eggs.
4Put ham or bacon on muffin and top with poached egg.
5For Hollandiase Sauce. Combine egg yolks and lemon juice in small saucepan. Mix briskly.
6Add cube of butter whole do not cut up. Cook over low heat, stirring constantly until thickened.
7Spoon Hollandaise over each serving
8For an extra treat top each egg with a spoonful of mashed avocado mixed with sour cream.
