1/2 cup mexican shredded cheese blend
Wisk eggs, milk, and salt and pepper in a small bowl. Microwave left over chili for 30 seconds. On medium heat spray a small skillet with non stick cooking spray.
Add egg mixture to skillet. When egg is fully cooked add chili and cheese. Fold egg over. Cook for a minute until cheese is melted.
Top with more cheese and sour cream...or whatever you like :)
