Ingredients For avocado eggs

1 lgavocado

2 x lgeggs

butter

salt & pepper
How To Make avocado eggs

1Preheat a non stick skillet to medium low heat. Lightly spray with oil.

2Slice side edge (lengthwise) off of avocado then slice in 1/2 (also lengthwise with skin still on), forming one thick slice in the middle. Remove the seed & use a small cookie cutter to make a hole in the center of your thick slice.

3Place butter in pan & melt. Place the avocado slice in the pan. Crack an egg into the center of the hole. Cover & cook for a minute or two, or until the egg is as you like it. Season with salt & pepper & serve.

4NOTE: Can also be done with bell pepper rings. Weight Watchers Points Plus: 8 (each serving)
