Add to a medium or large bowl: Pancake mix, milk, egg yolks. Mix until combined and no lumps remain.
In a separate small bowl, beat your egg whites until stiff peaks form on your beaters.
Fold the egg whites into your pancake mixture. Be careful not to stir, you want the volume to remain. Make sure all your egg whites incorporate into your batter and there are no egg white lumps.
Add to your waffle griddle, cooking 1 minute on each side (or until done to your satisfaction). Enjoy!
