Ingredients

1 1/2 c
chopped dates (lightly sugared)
1 1/2 c
hot water
2 Tbsp
butter, softened
2 1/4 c
flour
1 1/2 c
sugar
3/4 c
coarsely chopped walnuts
1 1/2 tsp
baking soda
2
eggs, lightly beaten
1 1/2 tsp
pure vanilla extract

Step-By-Step

1In a large bowl, combine the dat, water and butter. Let stand for 5 minutes.
2In a large bowl, combine the flour, sugar, walnuts,and baking soda.
3In a small bowl, combine the eggs, vanilla and date mixture. Stir into dry ingredients. Do not drain the water out of the dates. Stir until well blended.
4Pour into two 8 in. x 4 in. loaf pans. Bake at 375 degrees for 45-50 minutes or until a toothpick comes out clean. Cover loosely with foil if the top browns too quickly. Cool for 10 minutes before removing from pans to wire rack
