easy tortilla breakfast pie
No need for this easy Tortilla Breakfast Pie to only be served as breakfast ! Serve at dinner time, with either a vegetable side or a crunchy salad. I love this recipe, as the crust is already done --- in the shape of Tortillas which are layered over and around the inside of the pie dish. Half the work of a traditional pie already done. This is a huge pie and is enough for at least 6 servings, but served together with a side or a salad, it can be stretched easily to 8 - 10 portions. Depending on your family's ages and usual portions of course.

Ingredients
- 2 tablespoons olive oil
- 1 1/4 pounds ground beef
- - salt and black pepper, to taste
- 4 large tortillas, flour
- 2 cups cheddar cheese, grated
- 4 large eggs
- 1 1/2 cups fresh cream {double cream}
- 1 teaspoon chili flakes
- 1 teaspoon salt
- 1 - onion, thinly sliced
- 1 tablespoon parsley, chopped
How To Make easy tortilla breakfast pie

Step 1Pre-heat the oven to 350 degrees. Grease a large pie dish.

Step 2Heat the Olive Oil and cook the Ground Beef until done - season to taste with Salt and Pepper.

Step 3Layer the Tortillas in the pie dish, letting the edges stick over the pie dish.

Step 4Scoop half of the cooked Beef into the Tortilla "crust" followed by half the Cheddar - repeat.

Step 5Beat together the Eggs, Fresh Cream. Chili Flakes and Salt - stir in the Onion and Parsley.

Step 6Pour the mixture over the meat and cheese - bake 40 - 45 minutes or until the center of the pie has set.

Step 7If the Tortilla edges browns too quickly, loosely cover - only the edges - with pieces of aluminum foil.

Step 8Remove pie from the oven and leave to settle for 5 minutes before slicing.
