No need for this easy Tortilla Breakfast Pie to only be served as breakfast ! Serve at dinner time, with either a vegetable side or a crunchy salad. I love this recipe, as the crust is already done --- in the shape of Tortillas which are layered over and around the inside of the pie dish. Half the work of a traditional pie already done. This is a huge pie and is enough for at least 6 servings, but served together with a side or a salad, it can be stretched easily to 8 - 10 portions. Depending on your family's ages and usual portions of course.

Ingredients For easy tortilla breakfast pie

  • 2 Tbsp
    olive oil
  • 1 1/4 lb
    ground beef
  • salt and black pepper, to taste
  • 4 lg
    tortillas, flour
  • 2 c
    cheddar cheese, grated
  • 4 lg
    eggs
  • 1 1/2 c
    fresh cream {double cream}
  • 1 tsp
    chili flakes
  • 1 tsp
    salt
  • 1
    onion, thinly sliced
  • 1 Tbsp
    parsley, chopped

How To Make easy tortilla breakfast pie

    Pre-heat the oven to 350 degrees. Grease a large pie dish.

    Heat the Olive Oil and cook the Ground Beef until done - season to taste with Salt and Pepper.

    Layer the Tortillas in the pie dish, letting the edges stick over the pie dish.

    Scoop half of the cooked Beef into the Tortilla "crust" followed by half the Cheddar - repeat.

    Beat together the Eggs, Fresh Cream. Chili Flakes and Salt - stir in the Onion and Parsley.

    Pour the mixture over the meat and cheese - bake 40 - 45 minutes or until the center of the pie has set.

    If the Tortilla edges browns too quickly, loosely cover - only the edges - with pieces of aluminum foil.

    Remove pie from the oven and leave to settle for 5 minutes before slicing.
