I have lived alone for many years so I learned to cut down recipes for small quantities. You can also use these recipes for larger groups by doubling ingredients.
sausage patties or your favorite healthy substitute
mexican blend shredded cheese
salt (to taste)
pepper (to taste)
butter or substitute
1Preheat oven to 350 degrees
2In a separate pot, cook grits approx 20 minutes, adding butter and salt to taste
3Cook sausage patties in pan on medium high heat.
4after cooking sausage patties, chop up in bite size peices.
5add chopped onion, saute until soft
6in a bowl, break eggs and stir well with fork.
7Add chopped tomato, shredded cheese, stir in grits and add eggs, stir. (in that order)
8Put in oven at 350 for 30 minutes, take out and let set for 5 minutes.
