this is one of my many best recipes she can cook really good
chopped collard greens
plum tomatoes, chopped
cooked sausage crumbles
salt and pepper
shredded sharp cheddar cheese
1in a large skillet, melt butter over medium high heat. add collard greens, tomatoes and sausage and cook 4-5 minutes, or until the vegetables are tender.
2in a large bowl, whisk together eggs, salt and pepper. add mixture to skillet, cook without stirring until eggs start to set on bottom.
3stir egg mixture gently to form large pieces. sprinkle with cheese and continue to cook until eggs are firm. serve.
