1 pkgrhodes white bread, frozen, thawed
- CASSEROLE:

1 lgtomato, cut into 1/4" thick slices

1/8 ccilantro, fresh, chopped

5 x lgeggs
-
1/2 cmilk
-
1/4 cwater
-
1/2 csour cream
-
1/4 tsptabasco hot sauce
-
1/2 cmozzarella cheese, shredded
-
salt & pepper, to taste
How To Make huevos rancheros breakfast casserole

1THE EARLY MORNING BEFORE: Coat a loaf pan with non stick cooking spray. Place frozen dough in pan & cover with plastic wrap coated with cooking spray to keep it from sticking to dough while rising. Let dough rise for 4 - 7 hours, until dough is 1” above pan. Actual time depends on the temperature of your kitchen. Carefully remove the plastic wrap. Preheat the oven to 350 degrees F. Bake bread 20 - 25 minutes, until golden brown. Remove bread from pan at once & place on a wire rack to cool. Brush the top with melted butter. Place bread on its side for easier slicing. 2THE NIGHT BEFORE: Spray an 8" x 8" baking dish with non stick cooking spray.

3Place sliced bread in a single layer in the bottom of the dish. Top sliced bread with sliced tomato. Sprinkle chopped cilantro over top the tomato.

4In a large bowl, whisk together the remaining ingredients until well combined.

5Pour egg mixture evenly into the baking dish over top the bread & tomato. Cover & refrigerate overnight.

6THE NEXT MORNING: Preheat your oven to 350 degrees F. (375 degrees F for high altitudes - above 3500 ft). Bake casserole, uncovered for 40 - 50 minutes until puffy & golden.
