Ingredients

2 1/2 c water
3/4 c quick grits
1 lb eckridge skinless smoked sausage
1 1/2 c cheddar cheese, shredded (sharp)
6 eggs beaten
1 1/2 tsp salt
1/2 tsp pepper
1-2 sliced tomatoes
2 Tbsp chopped parsley
1 tsp dry mustard
1 can(s) evaporated milk 12 oz

What a wonderfully flavorful and hearty breakfast dish! The smoked sausage is a delight, so don't skimp, ya hear? Also, I can imagine this being just as divine with any number of cheese combinations. Grab your favorite varieties and get creative!

 

Directions

Heat oven to 325. Grease a 9X13 dish. Bring water to a boil; add 1 tsp salt slowly stir in grits. Reduce heat and simmer 4-5 minutes until thickened stirring frequently.

Stir in chopped smoked sausage and half of sharp cheese. Spoon into dish and sprinkle with remaining cheese. Combine eggs, milk and spices. Pour over grits mixture and bake for 50 minutes or until knife inserted 1 1/2 inches from side comes out clean. Let stand 10-15 minutes. Garnish with tomato and parsley.

I have this in the oven right now...its smellin so good! I didn't have smoked sausage...so used a maple sausage...

Patricia I have had people tell me they had never liked grits until this. Try thinking of them as polenta... This is a great recipe to take to someone that has suffered a loss.

My husband and I love grits and eggs. I will cook up the grits and then cook the eggs in a pan and add a little water (1T) to the pan of eggs and cover and continue to cook until set and then put the grits in the middle of the plate with salt and pepper and a little butter and then put the eggs on top and YUMMY!!
