Grits Breakfast Bake
|2 1/2 c||water|
|3/4 c||quick grits|
|1 lb||eckridge skinless smoked sausage|
|1 1/2 c||cheddar cheese, shredded (sharp)|
|1 1/2 tsp||salt|
|2 Tbsp||chopped parsley|
|1 tsp||dry mustard|
|1 can(s)||evaporated milk 12 oz|

DirectionsHeat oven to 325. Grease a 9X13 dish. Bring water to a boil; add 1 tsp salt slowly stir in grits. Reduce heat and simmer 4-5 minutes until thickened stirring frequently.Stir in chopped smoked sausage and half of sharp cheese. Spoon into dish and sprinkle with remaining cheese. Combine eggs, milk and spices. Pour over grits mixture and bake for 50 minutes or until knife inserted 1 1/2 inches from side comes out clean. Let stand 10-15 minutes. Garnish with tomato and parsley.
