Another great breakfast or brunch idea. I make this dish many different ways, but this is how I decided to make it this morning. My son loves cottage cheese, so decided to add it. He loved it. Its great warmed up as well.

Ingredients

1 1/2 c
diced smoked sausage, summer sausage or kielbasa
4
eggs, beaten
1/4 c
flour
1/4 tsp
garlic powder, salt & pepper
1/2 tsp
baking powder
1/3 c
milk
1
green onion, sliced - green and white parts
1 c
cottage cheese, small curd
2 1/2 c
shredded , white sharp cheddar cheese or your favorite - divided

Step-By-Step

1Preheat oven to 375 degree F.

Grease a 9 inch pie plate.

In a medium bowl, beat eggs, whisk in the flour, seasonings, milk and baking powder.

Stir in 2 cups of cheese, onion, cottage cheese and sausage. Combine well.
2Pour into prepared dish. Bake for 25 - 30 minutes or until knife inserted in center comes out clean. You can serve now or sprinkle with additional cheese and place back into oven and bake until melted.
3I leave the dish set for 5 - 10 minutes, before cutting.

Enjoy with some fresh fruit or as i served, with halved cherry tomatoes. Quite satisfying.
